The histamine content increases with the degree of spoilage of the organism. Histamine can produce chromogenic substances with chromogenic agents under the action of enzymes, which has a maximum absorption peak at 460 nm. The histamine content of the sample can be calculated by measuring the OD value at 460 nm.
